I tend to use Audacity (). It's pretty simplistic but it gets the job done and it's open source. If your soundcard allows it will also record up to 16 channels.
I use it in a very simple manner which is to capture all the audio I want to process (an album at a time) and then use Wave Corrector to do the processing.
I would recommend the stable release 1.2.4b over the beta at the moment as I found that the beta kept on crashing.
